Hainanese Chicken Rice

Hello hungry ones!

We are going Asian these first few times. For today, we are going to make Hainanese Chicken Rice. If you have not heard of it, well you do now and you’re welcome. If you have not tried it yet, you should now and you’re welcome again. We are very nice people in this blog. Alex made this one!

What you need:

  • 1 whole dressed chicken
  • ginger (about 5 thumbs total, 3-peeled and crushed, 2- diced)
  • garlic (4 cloves total, 2 crushed, 2 minced)
  • onions (1/2 of a large one)
  • spring onions (2-3 leaves tied in knots, 1-2 for garnish)
  • salt to taste
  • sesame oil
  • vegetable oil
  • 3 cups washed & drained rice

For the dipping sauce use:

  • 4 tbsp of broth
  • 3 tbsp soy sauce
  • sesame oil
  • fried garlic

Combine in a bowl.

For the main dish, this is what you’re gonna do:

Stuff the chicken with crushed ginger, spring onions.

Step 2. Rub salt on the chicken's skin and insides as well. (I know it looks like an operation, but just get on with it!)

Step 3. Grab a pot that fits the chicken plus allowance. Boil water and submerge the chicken, breast down. Wait for 20 mins, switch sides of chicken and wait another 20 minutes.

After a total of 40 mins, chicken's ready! Do not discard broth!

Step 4. In a separate pot, saute garlic, onions and ginger with 1 tbsp sesame oil and 1 tbsp vegetable oil.

Step 6. add 4 cups of broth to rice mixture, wait 20-30 mins for rice to cook, stirring occasionally.

Step 7. In the meantime, you can prepare the dipping sauce while waiting for the rice to finish. Here’s how use 4 tbsp of broth, 3 tbsp soy sauce, sesame oil and fried garlic and combine in a bowl.

There, when the rice is done, put some butter on it if you want. Just cause. Well... butter is love, so get on with it! Mix (this is optional by the way). If all's good, put in on a nice plate as well. You will top it with the chicken annnnd...

So yes, that’s Alex’s Hainanese Chicken Rice. You can opt to skin the chicken first to lessen the fat content (just like what I do) and skip the butter! It still tastes divine too, no doubt! Cheers!

    • Yes, it is! Thing about this chicken dish is that it’s easy to make: put everything inside the cavity, rub it with salt, dunk it in boiling water and your meal is solved!
