Salted Caramel Walnut Cake

Hello, hungry ones! Our friend Anica has shared with us another great recipe. So let’s skip the small talk and get right on it!

What you need:

For the butter cake  (Sift the following)

  • 2 1/2 cup cake flour
  • 2 tsp baking powder
  • 1 tsp salt

And combine these ingredients in a bowl, using a mixer:

  • 1 small bar margarine (ideally butter)
  • 1 1/4 c sugar
  • 1 cup fresh milk
  • 1 tsp vanilla
  • 4 eggs

For the salted caramel frosting

  • 3 cups sugar (I used brown)
  • 1 cup evaporated milk
  • 1/2 tsp salt (I added 1 tbsp)
  • 1 small bar butter/margarine
  • 1 tsp vanilla
  • 1 cup crushed walnuts

What to do:

  • Mix margarine and sugar until frothy. Add the 4 eggs, one at a time. Combine flour mixture and add fresh milk, vanilla.
  • Divide mixture in 9×13 pans (greased and floured) and bake at 375 °F at 25-30 minutes.
  • For the caramel:
  • In a sauce pan, combine sugar, evaporated milk and salt. Bring to a boil until it reaches a soft ball texture and let it cool for 5 minutes, then add the butter, vanilla and crushed walnuts. Whisk until combined.
  • When cake is done, set on a rack to cool then layer with frosting.
  • Serve and devour!
